Hearty Chicken Stew with Butternut Squash & Quinoa
Ingredients
- 1½ lb. butternut squash, peeled, seeded & chopped into ½-inch pieces
- 3½ cups chicken broth
- 1½ lb. boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 medium yellow onion, finely chopped
- ½ tsp real salt
- 4 cloves garlic, minced
- 1½ tsp dried oregano
- 1 can (14 oz) petite diced tomatoes
- ⅔ cup uncooked quinoa
- ¾ cup pitted and quartered kalamata olives
- Freshly ground black pepper, to taste
- ¼ cup minced fresh flat-leaf parsley

Ham, Lentil and Kale Soup
Ingredients
- 1 tablespoon olive oil, plus extra, for drizzling
- 1 brown onion, chopped
- 2 cloves garlic, sliced
- 1.4kg ham hock
- 6 litres water
- 1 cup (280g) tomato purée (tomato passata)
- 8 sprigs thyme
- 6 sprigs parsley
- 2 stalks celery, trimmed and chopped
- 1 carrot, peeled and chopped
- 1 swede, peeled and chopped
- 1 turnip, peeled and chopped
- 1 cup (200g) puy lentils*
- 1½ cups (270g) macaroni
- 300g kale, stems removed and chopped

Paleo Slow Cooker Butternut Squash Soup
Ingredients
- 6 cups chopped butternut squash (3 pound squash)
- 2 medium apples, peeled, cored and chopped
- 2 medium carrots, peeled and chopped
- 1 small white onion, chopped
- 1 clove of garlic, chopped
- 2 cups chicken stock (or more if desired)
- 1/2 tsp. dried sage
- 1 1/2 tsp. dried thyme
- 1/2 tsp. real salt
- 1/4 tsp. ground black pepper
- 1 cup almond milk
